- 1 box white cake mix (15.25 oz)
- 2 large eggs, room temperature
- 0.33 cup vegetable oil
- 0.5 tsp green gel food coloring
- 0.25 cup granulated sugar (for rolling)
- 0.5 cup powdered sugar (for rolling)
Instructions
- Mix the dough: In a large bowl, combine the white cake mix, eggs, and vegetable oil. Use a spatula to mix until you achieve a thick dough.
- Add the green gel food coloring and blend it until you reach the desired color.
- Cover the bowl and refrigerate the dough for at least 30 minutes.
- Preheat your oven to 350°F (175°C) and prepare your baking sheets with parchment paper.
- Roll the cookie dough into balls, coating them first in granulated sugar and then in powdered sugar.
- Bake for 9–12 minutes until edges are set and centers are soft.
- Cool on the baking sheets for about 5 minutes before transferring to a wire rack to cool completely.
Notes
Storing leftovers in an airtight container at room temperature for up to 5 days. For longer storage, freeze cookies with parchment paper between layers.
