Description

Delightful cookies with a vibrant green hue, perfectly chewy, and ideal for celebrating St. Patrick’s Day.


Ingredients

  • 1 box white cake mix (15.25 oz)
  • 2 large eggs, room temperature
  • 0.33 cup vegetable oil
  • 0.5 tsp green gel food coloring
  • 0.25 cup granulated sugar (for rolling)
  • 0.5 cup powdered sugar (for rolling)

Instructions

  1. Mix the dough: In a large bowl, combine the white cake mix, eggs, and vegetable oil. Use a spatula to mix until you achieve a thick dough.
  2. Add the green gel food coloring and blend it until you reach the desired color.
  3. Cover the bowl and refrigerate the dough for at least 30 minutes.
  4. Preheat your oven to 350°F (175°C) and prepare your baking sheets with parchment paper.
  5. Roll the cookie dough into balls, coating them first in granulated sugar and then in powdered sugar.
  6. Bake for 9–12 minutes until edges are set and centers are soft.
  7. Cool on the baking sheets for about 5 minutes before transferring to a wire rack to cool completely.

Notes

Storing leftovers in an airtight container at room temperature for up to 5 days. For longer storage, freeze cookies with parchment paper between layers.
