Description

This Easy Salsa Chicken Crock Pot dish combines tender chicken with zesty salsa, black beans, and sweet corn for a delightful, hassle-free meal.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup salsa
  • 1 packet taco seasoning
  • 1 can black beans (drained and rinsed)
  • 1 cup corn (frozen or canned)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro for garnish
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken by placing the breasts at the bottom of your crock pot.
  2. Add the salsa over the chicken, ensuring it’s coated.
  3. Sprinkle the taco seasoning on top.
  4. Layer the black beans and corn on top of the chicken mixture.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Shred the chicken in the pot using two forks.
