- 4 boneless, skinless chicken breasts
- 1 cup salsa
- 1 packet taco seasoning
- 1 can black beans (drained and rinsed)
- 1 cup corn (frozen or canned)
- 1 cup shredded cheese (cheddar or Mexican blend)
- Fresh cilantro for garnish
- Salt and pepper to taste
Instructions
- Prepare the chicken by placing the breasts at the bottom of your crock pot.
- Add the salsa over the chicken, ensuring it’s coated.
- Sprinkle the taco seasoning on top.
- Layer the black beans and corn on top of the chicken mixture.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Shred the chicken in the pot using two forks.
- Melt the cheese on top, covering for 5-10 minutes.
- Serve with fresh cilantro sprinkled on top.
Notes
