Description

A hearty and comforting slow-cooked beef stew infused with vibrant vegetables and rich flavors, perfect for family gatherings.


Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 4 large carrots, sliced
  • 4 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the beef cubes and sear them until browned on all sides.
  2. Carefully move the seared beef into your crockpot, allowing the juices to follow.
  3. Toss the sliced carrots, diced potatoes, chopped onion, minced garlic, and dried herbs into the crockpot.
  4. Pour in the beef broth and add the tomato paste. Gently stir to combine.
  5. Cover and cook on low for about 8 hours or on high for 4 hours until the beef is tender.
  6. Taste the stew and adjust seasoning with salt and pepper as needed. Serve warm with crusty bread or creamy mashed potatoes.
