- 1.5–2 cups cooked shredded chicken
- 1–2 tablespoons ranch seasoning mix or ¼ cup light ranch dressing
- High-protein tortillas
- ¼ cup shredded cheese (Monterey Jack and cheddar blend)
- Optional add-ins: diced bell peppers, corn, or fresh spinach
Instructions
- Mix the cooked, shredded chicken with ranch seasoning or dressing in a bowl.
- Heat a non-stick skillet or griddle over medium heat, adding cooking spray or butter.
- Lay a tortilla in the pan, pile half of the seasoned chicken on one half, and sprinkle cheese on top.
- Fold the tortilla over and press down lightly with a spatula.
- Cook for 3-4 minutes per side until golden brown and the cheese is melted.
- Transfer to a cutting board, let it rest for a minute, then slice and serve.
Notes
For best results, pre-cooked chicken can be used. Customize with different add-ins and sauces.
