Description

A delicious and quick quesadilla packed with protein, featuring shredded chicken, ranch seasoning, and oozy cheese.


Ingredients

  • 1.52 cups cooked shredded chicken
  • 12 tablespoons ranch seasoning mix or ¼ cup light ranch dressing
  • High-protein tortillas
  • ¼ cup shredded cheese (Monterey Jack and cheddar blend)
  • Optional add-ins: diced bell peppers, corn, or fresh spinach

Instructions

  1. Mix the cooked, shredded chicken with ranch seasoning or dressing in a bowl.
  2. Heat a non-stick skillet or griddle over medium heat, adding cooking spray or butter.
  3. Lay a tortilla in the pan, pile half of the seasoned chicken on one half, and sprinkle cheese on top.
  4. Fold the tortilla over and press down lightly with a spatula.
  5. Cook for 3-4 minutes per side until golden brown and the cheese is melted.
  6. Transfer to a cutting board, let it rest for a minute, then slice and serve.

Notes

For best results, pre-cooked chicken can be used. Customize with different add-ins and sauces.
