- 1½ cups (3 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 3½ cups all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ cup granulated sugar (for rolling)
- About 48 pastel-colored chocolate candies
- Optional: pastel nonpareils or sprinkles for decoration
Instructions
- Preheat the oven to 350°F (175°C) and line your baking sheets with parchment paper.
- Cream the softened butter and 1 cup of granulated sugar together using an electric mixer until light and fluffy, about 2-3 minutes.
- Mix the flour, baking powder, and salt in a separate bowl.
- Combine the dry ingredients with the butter mixture in three additions, mixing on low speed.
- Shape the dough into 1-inch balls and roll in the granulated sugar.
- Bake for 8-10 minutes until the edges are set.
- Add one chocolate candy in the center of each warm cookie immediately.
- Cool the cookies on a wire rack completely.
Notes
Chill the dough for a couple of hours for easier rolling and shape retention. Customize with different chocolate varieties or sprinkles.
