Description

Delightful cookies topped with chocolate kisses, perfect for spring celebrations.


Ingredients

  • 1½ cups (3 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup granulated sugar (for rolling)
  • About 48 pastel-colored chocolate candies
  • Optional: pastel nonpareils or sprinkles for decoration

Instructions

  1. Preheat the oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. Cream the softened butter and 1 cup of granulated sugar together using an electric mixer until light and fluffy, about 2-3 minutes.
  3. Mix the flour, baking powder, and salt in a separate bowl.
  4. Combine the dry ingredients with the butter mixture in three additions, mixing on low speed.
  5. Shape the dough into 1-inch balls and roll in the granulated sugar.
  6. Bake for 8-10 minutes until the edges are set.
  7. Add one chocolate candy in the center of each warm cookie immediately.
  8. Cool the cookies on a wire rack completely.

Notes

Chill the dough for a couple of hours for easier rolling and shape retention. Customize with different chocolate varieties or sprinkles.
