- 1 cup all-purpose flour
- 1 cup cornstarch
- 2 large eggs
- 1 cup cold water
- Salt and pepper to taste
- 1 cup freshly squeezed orange juice
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
Instructions
- Marinate the chicken: Season your chicken pieces with salt and pepper. Let them sit for at least 15 minutes.
- Prepare the batter: In a large bowl, whisk together the flour, cornstarch, and a pinch of salt. In another bowl, beat the eggs, and slowly stir in the cold water until smooth. Combine with the dry ingredients.
- Dip the chicken: Coat each piece in the batter and let the excess drip off.
- Fry the chicken: Heat oil in a pan over medium-high. Fry in batches for about 5-6 minutes until golden.
- Make the orange sauce: Combine orange juice, soy sauce, brown sugar, garlic, and ginger in a saucepan over medium heat. Once simmering, add the cornstarch mixture to thicken.
- Toss the chicken in the orange sauce until well-coated.
Notes
Letting the chicken sit covered in the sauce for a minute enhances the flavor.
