Description

A refreshing salad combining crisp cucumbers and sweet strawberries, enhanced with fresh herbs and a tangy vinaigrette.


Ingredients

  • 2 cucumbers, sliced
  • 2 cups strawberries, sliced
  • 1/4 cup fresh herbs (basil, mint, or your choice), chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic or apple cider vinegar
  • Salt, to taste
  • Pepper, to taste
  • Optional: 1/2 cup feta or goat cheese, crumbled
  • Optional: 1/4 cup walnuts or pecans, chopped

Instructions

  1. Slice the cucumbers and strawberries into bite-sized pieces and place in a large bowl.
  2. Add the chopped fresh herbs over the sliced fruits.
  3. Create the vinaigrette by whisking together olive oil, vinegar, salt, and pepper in a small bowl.
  4. Combine the vinaigrette with the cucumber and strawberry mixture, gently tossing to coat.
  5. Add optional crumbled cheese and nuts on top if desired.
  6. Serve immediately or chill for 30 minutes for a deeper flavor integration.
