Description

A hearty and comforting casserole made with layers of frozen pierogi, kielbasa, and melted cheese, cooked to perfection in a slow cooker.


Ingredients

  • 1 package frozen pierogi (potato and cheese)
  • 1 pound kielbasa, sliced
  • 2 cups shredded cheese (Cheddar or mozzarella)
  • 1 large onion, chopped
  • 2 cups sauerkraut (optional)
  • 1 cup sour cream
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. Heat a drizzle of olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5-7 minutes.
  2. Layer half of the frozen pierogi in the crockpot, followed by half of the sliced kielbasa, half of the sautéed onions, half of the shredded cheese, and half of the sauerkraut.
  3. Repeat the layers with the remaining ingredients.
  4. Spread sour cream over the top, season with salt and pepper.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the pierogi are tender and the cheese is melted.
  6. Serve hot and enjoy!

Notes

Assemble in the crockpot the night before for convenience. Optional oven baking: 350°F for 45-60 minutes.
