Description

A comforting and flavorful dish featuring creamy navy beans and smoky kielbasa, slow-cooked to perfection.


Ingredients

  • 1 pound kielbasa, sliced
  • 2 cups dried navy beans, soaked overnight
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1/4 cup barbecue sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 4 cups chicken broth

Instructions

  1. Prep the Beans: Drain and rinse the soaked navy beans under cold water.
  2. Brown the Kielbasa: Heat a skillet over medium heat and add the sliced kielbasa. Cook until golden brown, about 5-7 minutes, then set aside.
  3. Combine Ingredients: In the crockpot, layer in the soaked beans, onion, garlic, bell pepper, diced tomatoes, barbecue sauce, brown sugar, Worcestershire sauce, smoked paprika, chili powder, salt, and pepper.
  4. Add the Kielbasa: Gently fold the browned kielbasa into the mixture and pour in the chicken broth.
  5. Cook Low and Slow: Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Ready to Serve: Once cooked, scoop out a bowl of Cowboy Beans and garnish with fresh herbs if desired.

Notes

For a vegetarian option, substitute kielbasa with plant-based sausage and use vegetable broth.
