- 1 pound kielbasa, sliced
- 2 cups dried navy beans, soaked overnight
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes
- 1/4 cup barbecue sauce
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- Salt and pepper to taste
- 4 cups chicken broth
Instructions
- Prep the Beans: Drain and rinse the soaked navy beans under cold water.
- Brown the Kielbasa: Heat a skillet over medium heat and add the sliced kielbasa. Cook until golden brown, about 5-7 minutes, then set aside.
- Combine Ingredients: In the crockpot, layer in the soaked beans, onion, garlic, bell pepper, diced tomatoes, barbecue sauce, brown sugar, Worcestershire sauce, smoked paprika, chili powder, salt, and pepper.
- Add the Kielbasa: Gently fold the browned kielbasa into the mixture and pour in the chicken broth.
- Cook Low and Slow: Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Ready to Serve: Once cooked, scoop out a bowl of Cowboy Beans and garnish with fresh herbs if desired.
Notes
For a vegetarian option, substitute kielbasa with plant-based sausage and use vegetable broth.
