Description

Ingredients

  • 4 small to medium chicken breasts (or 2 large, halved)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 34 cloves garlic, minced
  • 1 cup light cream or heavy cream
  • 1 tablespoon Italian seasoning or oregano
  • 1/2 cup parmesan cheese, grated
  • 1 cup spinach, chopped (optional)

Instructions

  1. Season both sides of the chicken with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat until shimmering.
  3. Add chicken breasts to the skillet and cook for 5-6 minutes on each side until golden brown and crispy. Remove and keep warm.
  4. Lower the heat and add minced garlic to the skillet, sautéing for 30 seconds.
  5. Pour in the cream, stirring continuously until combined with garlic.
  6. Add Italian seasoning and grated Parmesan, stirring until smooth. Fold in chopped spinach if using and simmer for 2-3 minutes.
  7. Return the chicken to the skillet and spoon the sauce over the top, simmering for a minute.
  8. Serve hot, alongside fresh pasta, roasted vegetables, or creamy mashed potatoes.

Notes

For a dairy-free option, use almond or coconut cream and nutritional yeast in place of Parmesan. Ensure chicken is at room temperature for even cooking.
