- 4 small to medium chicken breasts (or 2 large, halved)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 3–4 cloves garlic, minced
- 1 cup light cream or heavy cream
- 1 tablespoon Italian seasoning or oregano
- 1/2 cup parmesan cheese, grated
- 1 cup spinach, chopped (optional)
Instructions
- Season both sides of the chicken with salt and pepper.
- Heat olive oil in a skillet over medium-high heat until shimmering.
- Add chicken breasts to the skillet and cook for 5-6 minutes on each side until golden brown and crispy. Remove and keep warm.
- Lower the heat and add minced garlic to the skillet, sautéing for 30 seconds.
- Pour in the cream, stirring continuously until combined with garlic.
- Add Italian seasoning and grated Parmesan, stirring until smooth. Fold in chopped spinach if using and simmer for 2-3 minutes.
- Return the chicken to the skillet and spoon the sauce over the top, simmering for a minute.
- Serve hot, alongside fresh pasta, roasted vegetables, or creamy mashed potatoes.
Notes
For a dairy-free option, use almond or coconut cream and nutritional yeast in place of Parmesan. Ensure chicken is at room temperature for even cooking.
