Ingredients

  • 0.25 teaspoon freshly ground black pepper
  • 0.25 teaspoon red pepper flakes, optional
  • 2 slices crusty bread, toasted
  • Fresh herbs (parsley, dill, or chives), chopped

Instructions

  1. Heat the olive oil in a nonstick skillet over medium heat until shimmering.
  2. Form two small mounds of crumbled feta in the pan, shaping them into nests.
  3. Cook the feta for 1 to 2 minutes until golden brown and crispy.
  4. Gently crack one egg into the center of each feta nest.
  5. Cover the skillet with a lid and cook for 3 to 4 minutes until egg whites are set but yolks are runny.
  6. Season with black pepper and red pepper flakes, then plate over toasted bread and garnish with chopped herbs.

Notes
