- 4 cod fillets – about 6 oz each
- 1 cup panko breadcrumbs
- ½ cup Parmesan cheese, finely grated
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- ½ tsp paprika
- Salt & black pepper – to taste
- 2 tbsp fresh parsley, chopped – optional
- ¼ cup mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
Instructions
- Prepare the cod: Pat the cod fillets dry with paper towels and season with salt and pepper.
- Make the coating: In a shallow bowl, mix panko breadcrumbs, Parmesan, garlic powder, onion powder, oregano, paprika, salt, and pepper.
- Create the zesty mixture: In a separate bowl, whisk together mayonnaise, Dijon mustard, and lemon juice.
- Coat the fillets: Brush one side of each fillet with the mayonnaise mixture, then press into the breadcrumb mixture.
- Heat the air fryer: Preheat the air fryer to 400°F (200°C) for 5 minutes.
- Arrange and cook: Place coated fillets in a single layer in the air fryer and cook for 10-12 minutes until golden brown.
- Finish & serve: Remove cod and garnish with parsley. Serve with lemon wedges.
Notes
For a gluten-free option, substitute panko breadcrumbs with gluten-free breadcrumbs or crushed cornflakes. Ensure cod fillets are thoroughly dried for maximum crispiness.
