- 1 lb steak (sirloin or ribeye)
- 2 cups fresh spinach
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese

- Red pepper flakes (optional)
Instructions
- Cook the tortellini: Boil them according to package instructions, then drain and set aside.
- Sear the steak: Heat olive oil in a large skillet over medium-high heat. Season steak bites with salt and pepper, add to the skillet, and cook until browned, about 3-5 minutes. Remove and set aside.
- Sauté garlic: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- Create the cream sauce: Pour in the heavy cream, stirring to combine, and bring to a gentle simmer. Fold in grated Parmesan cheese until melted and smooth.
- Add spinach and tortellini: Toss in fresh spinach and cooked tortellini and stir gently until spinach wilts.
- Return the steak: Add the steak bites back to the skillet and mix everything together.
- Season and serve: Adjust seasoning with salt, pepper, and red pepper flakes if desired. Serve immediately while warm.
Notes
For added flavor, consider using sun-dried tomatoes or artichokes. Use lactose-free cream for dietary restrictions.
