Ingredients

  • 1 lb steak (sirloin or ribeye)
  • 2 cups fresh spinach
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Cook the tortellini: Boil them according to package instructions, then drain and set aside.
  2. Sear the steak: Heat olive oil in a large skillet over medium-high heat. Season steak bites with salt and pepper, add to the skillet, and cook until browned, about 3-5 minutes. Remove and set aside.
  3. Sauté garlic: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  4. Create the cream sauce: Pour in the heavy cream, stirring to combine, and bring to a gentle simmer. Fold in grated Parmesan cheese until melted and smooth.
  5. Add spinach and tortellini: Toss in fresh spinach and cooked tortellini and stir gently until spinach wilts.
  6. Return the steak: Add the steak bites back to the skillet and mix everything together.
  7. Season and serve: Adjust seasoning with salt, pepper, and red pepper flakes if desired. Serve immediately while warm.
