- 12 ounces fettuccine or penne pasta
- 1 cup dry red wine
- 1 cup heavy cream
- 3 cloves garlic, minced
- 1 medium onion, chopped

- 1/2 cup freshly grated Parmesan cheese
- Salt, to taste
- Pepper, to taste
- Fresh parsley, for garnish
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Add your pasta and cook until al dente according to package instructions. Drain and set aside, reserving a bit of the pasta water.
- Sauté the Aromatics: In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until translucent.
- Brown the Sausage: Crumble the Italian sausage into the skillet. Stir occasionally, cooking until browned.
- Deglaze with Red Wine: Pour in the red wine, allowing it to simmer until reduced by half.
- Stir in Cream: Lower the heat and blend in the heavy cream. Season with salt and pepper.
- Combine with Pasta: Add your drained pasta to the skillet, tossing gently until coated with sauce.
- Serve: Plate the pasta, topping with freshly grated Parmesan cheese and parsley.
Notes
For added depth, allow the wine to reduce slowly for enhanced flavor. Customize with added vegetables if desired.
