Description

A cozy and luxurious dish of tender chicken thighs enveloped in a velvety creamy garlic sauce, perfect for weeknight dinners.


Ingredients

  • 8 bone-in, skin-on chicken thighs (About 2 lbs.)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 2 tbsp unsalted butter
  • 6 cloves garlic (minced)
  • 1/2 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp fresh parsley (chopped, for garnish)

Instructions

  1. Pat the chicken thighs dry and season them with salt, pepper, and garlic powder.
  2. Heat olive oil in a skillet over medium-high heat and sear the chicken thighs skin-side down for 6-8 minutes until golden brown. Flip and cook for another 5-6 minutes until cooked through. Remove and set aside.
  3. Reduce heat to medium, add butter, and once melted, add minced garlic, cooking for 30 seconds until fragrant.
  4. Pour chicken broth into the skillet, scrape up browned bits, and let simmer for 3-4 minutes. Then stir in heavy cream and simmer for another 2-3 minutes to thicken.
  5. Stir in Parmesan cheese until melted and creamy.
  6. Return chicken to the skillet, spoon sauce over and garnish with fresh parsley before serving.

Notes

For make-ahead, prepare the sauce in advance and reheat when ready to cook the chicken. Adjust cooking times for boneless chicken thighs and feel free to substitute heavy cream for half-and-half or coconut milk.
