A cozy and luxurious dish of tender chicken thighs enveloped in a velvety creamy garlic sauce, perfect for weeknight dinners.

- 8 bone-in, skin-on chicken thighs (About 2 lbs.)
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 2 tbsp unsalted butter
- 6 cloves garlic (minced)
- 1/2 cup low-sodium chicken broth
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- 2 tbsp fresh parsley (chopped, for garnish)
Instructions
- Pat the chicken thighs dry and season them with salt, pepper, and garlic powder.
- Heat olive oil in a skillet over medium-high heat and sear the chicken thighs skin-side down for 6-8 minutes until golden brown. Flip and cook for another 5-6 minutes until cooked through. Remove and set aside.
- Reduce heat to medium, add butter, and once melted, add minced garlic, cooking for 30 seconds until fragrant.
- Pour chicken broth into the skillet, scrape up browned bits, and let simmer for 3-4 minutes. Then stir in heavy cream and simmer for another 2-3 minutes to thicken.
- Stir in Parmesan cheese until melted and creamy.
- Return chicken to the skillet, spoon sauce over and garnish with fresh parsley before serving.
Notes
For make-ahead, prepare the sauce in advance and reheat when ready to cook the chicken. Adjust cooking times for boneless chicken thighs and feel free to substitute heavy cream for half-and-half or coconut milk.
