Description

Deliciously moist and rich carrot cake bars topped with creamy frosting, perfect for any occasion.


Ingredients

  • 2 cups grated carrots
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup chopped walnuts or pecans (optional)
  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease your baking dish.
  2. Mix the grated carrots, sugar, vegetable oil, eggs, and vanilla in a large bowl until combined.
  3. Whisk together flour, baking powder, baking soda, salt, and cinnamon in another bowl.
  4. Combine the dry mixture into the wet mixture, mixing until just combined; fold in nuts if using.
  5. Pour the batter into the prepared baking dish and spread evenly.
  6. Bake for 25-30 minutes, until a toothpick comes out clean.
  7. Prepare the cream cheese frosting by beating together the cream cheese and butter until smooth, then gradually add powdered sugar and vanilla.
  8. Frost the cooled bars with cream cheese frosting.
  9. Slice into squares or rectangles to serve.

Store leftovers in an airtight container in the fridge for up to 5 days or freeze before frosting for up to 3 months.
