- 2 cups grated carrots
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda

- 1 tsp ground cinnamon
- 1/2 cup chopped walnuts or pecans (optional)
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract (for frosting)
Instructions
- Preheat the oven to 350°F (175°C) and grease your baking dish.
- Mix the grated carrots, sugar, vegetable oil, eggs, and vanilla in a large bowl until combined.
- Whisk together flour, baking powder, baking soda, salt, and cinnamon in another bowl.
- Combine the dry mixture into the wet mixture, mixing until just combined; fold in nuts if using.
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 25-30 minutes, until a toothpick comes out clean.
- Prepare the cream cheese frosting by beating together the cream cheese and butter until smooth, then gradually add powdered sugar and vanilla.
- Frost the cooled bars with cream cheese frosting.
- Slice into squares or rectangles to serve.

Store leftovers in an airtight container in the fridge for up to 5 days or freeze before frosting for up to 3 months.
