Ingredients

Scale
  • 225 g salted butter, softened
  • 350 g brown sugar, packed
  • 2 large eggs, at room temperature
  • 5 ml vanilla extract
  • 150 g dried cranberries
  • 200 g white chocolate, chopped

  • 1/2 tsp baking powder

  2. Cream together softened butter and brown sugar until light and fluffy.
  3. Beat in the eggs and vanilla extract until the mixture is smooth.
  4. In another bowl, combine flour, baking powder, and salt.
  5. Gradually whisk the dry ingredients into the wet mixture until just combined.
  6. Fold in cranberries and chopped white chocolate until evenly mixed.
  7. Pour the batter into the prepared pan and spread evenly.
  8. Bake for about 25-30 minutes, or until a toothpick comes out clean.
  9. Let cool completely before topping with cream cheese frosting.

Notes

These bars can be made ahead of time and stored in the refrigerator. Consider adding citrus zest for extra flavor, and avoid overmixing the batter for best results.
