Instructions

  2. Whisk the Pancake Batter: In a mixing bowl, whisk together cottage cheese and eggs until combined. Stir in flour, 2 tablespoons sugar, baking powder, salt, and vanilla until just combined.
  3. Cook the Pancakes: Heat a non-stick skillet over medium heat, grease lightly, and pour 1/4 cup batter for each pancake. Cook for 2-3 minutes until bubbles form, then flip and cook for another 1-2 minutes until golden brown.
  4. Serve: Stack pancakes on plates and drizzle with the strawberry syrup. Serve immediately.
