Instructions
- Prepare the Strawberry Syrup: In a small saucepan, combine strawberries, 1/4 cup sugar, 2 tablespoons water, and lemon juice. Simmer over medium heat for 7-10 minutes until thickened.
- Whisk the Pancake Batter: In a mixing bowl, whisk together cottage cheese and eggs until combined. Stir in flour, 2 tablespoons sugar, baking powder, salt, and vanilla until just combined.
- Cook the Pancakes: Heat a non-stick skillet over medium heat, grease lightly, and pour 1/4 cup batter for each pancake. Cook for 2-3 minutes until bubbles form, then flip and cook for another 1-2 minutes until golden brown.
- Serve: Stack pancakes on plates and drizzle with the strawberry syrup. Serve immediately.
Notes
For a gluten-free option, substitute all-purpose flour with almond flour or a gluten-free blend. Additionally, you can customize the pancakes with spices or fruits of your choice.
