Description

A heartwarming and rich classic beef stew that brings comfort to any table with tender meat and flavorful broth.


Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 4 cups beef broth
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 bay leaf

Instructions

  1. Heat the oil in a large pot or Dutch oven over medium-high heat.
  2. Add the beef chunks in batches, browning them on all sides.
  3. After browning the beef, sauté the chopped onion and minced garlic until softened, about 3-5 minutes.
  4. Stir in the tomato paste, dried thyme, salt, and pepper, cooking for 1 minute.
  5. Pour in the beef broth and add the bay leaf. Bring to a boil, then reduce to low heat.
  6. Let the stew simmer for 1.5 to 2 hours, stirring occasionally.
  7. Add sliced carrots and diced potatoes and cook for an additional 30 minutes until fork-tender.
  8. Remove the bay leaf, adjust seasonings if needed, and serve warm.

Notes

For best flavor, make a day in advance. Tastes even better the next day. Can be customized with your favorite veggies.
