- 2 lbs beef chuck, cut into cubes
- 4 cups beef broth
- 4 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 bay leaf
Instructions
- Heat the oil in a large pot or Dutch oven over medium-high heat.
- Add the beef chunks in batches, browning them on all sides.
- After browning the beef, sauté the chopped onion and minced garlic until softened, about 3-5 minutes.
- Stir in the tomato paste, dried thyme, salt, and pepper, cooking for 1 minute.
- Pour in the beef broth and add the bay leaf. Bring to a boil, then reduce to low heat.
- Let the stew simmer for 1.5 to 2 hours, stirring occasionally.
- Add sliced carrots and diced potatoes and cook for an additional 30 minutes until fork-tender.
- Remove the bay leaf, adjust seasonings if needed, and serve warm.
Notes
For best flavor, make a day in advance. Tastes even better the next day. Can be customized with your favorite veggies.
