  • 2 and 1/4 teaspoons active dry yeast (one packet)
  • 1/4 cup granulated sugar
  • 3 and 1/2 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 1 large egg, at room temperature
  • 1/4 cup unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • Vegetable oil, for frying
  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 2 tablespoons milk or cream, as needed
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1 cup chopped peanut butter cups
  • 1/4 cup chopped roasted peanuts (optional)

Instructions

  1. Activate the yeast: In a large bowl, combine the warm milk, yeast, and 1 tablespoon of the granulated sugar. Allow this mixture to sit for 5-10 minutes until it becomes foamy.
  2. Create the dough: Add the remaining granulated sugar, flour, salt, egg, melted butter, and vanilla extract to the yeast mixture. Mix until a shaggy dough forms.
  3. Knead to perfection: Turn the dough onto a lightly floured surface. Knead for 8-10 minutes until the dough is smooth and elastic.
  4. Let it rise: Lightly grease a bowl and place your kneaded dough inside. Cover with a cloth and let it rise for about 1 to 1.5 hours until doubled in size.
  5. Prepare the peanut butter filling: Whisk together creamy peanut butter, powdered sugar, and salt. Gradually add milk or cream until smooth.
  6. Shape the donuts: Roll the risen dough out to about 1/2 inch thick. Cut out donut shapes using a donut cutter.
  7. Second rise: Transfer the cut donuts to a baking sheet, cover loosely, and let them rise for another 30-45 minutes.
  8. Fry to golden perfection: Heat vegetable oil in a pot to 350-375°F. Carefully fry the donuts for 1-2 minutes on each side until golden brown.
  9. Glaze time: Melt chocolate chips and heavy cream together until smooth. Dip the tops of cooled donuts into the glaze.
  10. Stuff and sprinkle: Pipe the peanut butter filling into each donut and top with chopped peanut butter cups and optional roasted peanuts.
