Ingredients

  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup heavy cream
  • ½ cup cocoa powder
  • 3 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the crust by mixing the chocolate graham cracker crumbs, melted butter, and sugar until combined; press into the bottom of your springform pan.
  3. Beat the softened cream cheese in an electric mixer until smooth.
  4. Gradually add the sour cream and heavy cream, mixing until creamy.
  5. Incorporate cocoa powder and granulated sugar, mixing thoroughly.
  6. Add the eggs one at a time, mixing at low speed until blended.
  7. Bake the cheesecake for 55 to 65 minutes, until the center slightly jiggles.
  8. Cool the cheesecake in the oven with the door ajar for one hour.
  9. Prepare the ganache by pouring hot heavy cream over chopped dark chocolate and stirring until smooth.
  10. Top the cheesecake with ganache, then refrigerate for at least four hours.
