Instructions
- Preheat the oven to 350°F (175°C).
- Prepare the crust by mixing the chocolate graham cracker crumbs, melted butter, and sugar until combined; press into the bottom of your springform pan.
- Beat the softened cream cheese in an electric mixer until smooth.
- Gradually add the sour cream and heavy cream, mixing until creamy.
- Incorporate cocoa powder and granulated sugar, mixing thoroughly.
- Add the eggs one at a time, mixing at low speed until blended.
- Bake the cheesecake for 55 to 65 minutes, until the center slightly jiggles.
- Cool the cheesecake in the oven with the door ajar for one hour.
- Prepare the ganache by pouring hot heavy cream over chopped dark chocolate and stirring until smooth.
- Top the cheesecake with ganache, then refrigerate for at least four hours.
