- 2 boneless, skinless chicken breasts
- 2 tablespoons chipotle seasoning
- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup diced bell peppers
- 1 cup diced tomatoes
- 1/2 cup shredded cheese
- 1/2 cup chipotle ranch dressing
- 4 large tortillas
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- Season the chicken breasts with chipotle seasoning, salt, and pepper on both sides.
- Grill the chicken for 6-7 minutes on each side, or until it reaches an internal temperature of 165°F. Let it rest before slicing.
- Combine rice, black beans, bell peppers, tomatoes, and half of the chipotle ranch dressing in a large bowl.
- Assemble each tortilla with a portion of the rice mixture, sliced chicken, cheese, and more dressing.
- Roll the tortilla tightly, tucking in the sides as you go.
- Serve the burritos immediately and enjoy!
Notes
For added flavor, marinate the chicken in chipotle seasoning before grilling. Customize with your favorite vegetables or toppings.
