Description

A flavorful burrito featuring grilled chicken, chipotle seasoning, and a creamy ranch dressing, packed with fresh vegetables and wrapped in a soft tortilla.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons chipotle seasoning
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup diced bell peppers
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese
  • 1/2 cup chipotle ranch dressing
  • 4 large tortillas
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with chipotle seasoning, salt, and pepper on both sides.
  3. Grill the chicken for 6-7 minutes on each side, or until it reaches an internal temperature of 165°F. Let it rest before slicing.
  4. Combine rice, black beans, bell peppers, tomatoes, and half of the chipotle ranch dressing in a large bowl.
  5. Assemble each tortilla with a portion of the rice mixture, sliced chicken, cheese, and more dressing.
  6. Roll the tortilla tightly, tucking in the sides as you go.
  7. Serve the burritos immediately and enjoy!

Notes
