Description

Ingredients

  • 2 tablespoons neutral cooking oil
  • 1 head garlic, peeled and minced or roughly chopped

  • 12 tablespoons homemade chili oil or garlic chili oil
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Prepare the rice by gently breaking apart the clumps of the day-old rice until each grain is separated.
  2. Create the garlic base by heating oil in a skillet, adding minced garlic, cooking until golden brown, and reserving some for garnish.
  3. Fry the rice in the garlic-infused oil, tossing until heated through and lightly toasted, then season with salt.
  4. Infuse the rice with chili oil, stirring to ensure even coating and adjusting seasonings to taste.
  5. Garnish the dish with reserved crispy garlic bits and fresh cilantro, then serve immediately.
