Instructions
- Prepare the rice by gently breaking apart the clumps of the day-old rice until each grain is separated.
- Create the garlic base by heating oil in a skillet, adding minced garlic, cooking until golden brown, and reserving some for garnish.
- Fry the rice in the garlic-infused oil, tossing until heated through and lightly toasted, then season with salt.
- Infuse the rice with chili oil, stirring to ensure even coating and adjusting seasonings to taste.
- Garnish the dish with reserved crispy garlic bits and fresh cilantro, then serve immediately.
Notes
