- 20 rice paper wrappers (8.5-inch diameter)
- 2 tablespoons vegetable oil for frying
Dipping Sauce:
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon honey or maple syrup
- 1/2 teaspoon chili flakes (optional)
Instructions
- Prepare the Filling: In a large mixing bowl, combine the ground chicken, shredded carrot, shredded zucchini, chopped spring onions, minced garlic, grated ginger, soy sauce, sesame oil, cornstarch, white pepper, and salt. Mix until evenly incorporated.
- Soften the Rice Paper: Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for 10 to 15 seconds until pliable, then transfer it to a clean, damp kitchen towel.
- Wrap the Filling: Place 1 heaping tablespoon of the filling in the center of the softened wrapper. Fold the bottom edge up over the filling, then fold in the side edges, rolling tightly to enclose the filling. Repeat with the remaining filling and wrappers.
- Fry to Perfection: Heat 1 tablespoon of vegetable oil in a large non-stick skillet over medium heat. Arrange the dumplings seam-side down without overcrowding the pan. Fry for 2 to 3 minutes on each side until golden brown and crispy.
- Drain and Serve: Remove the cooked dumplings from the skillet to drain on paper towels. Serve warm alongside the dipping sauce.
Notes
For a lighter alternative, air fry at 375°F (190°C) for 12-15 minutes or bake at 400°F (200°C) for 15-20 minutes. Make the filling a day ahead for convenience.
