Description

A vibrant salad featuring tender shredded chicken, crispy rice, and a rich peanut dressing, perfect for a refreshing meal.


Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups crispy rice (puffed rice or rice crackers)
  • 2 cups mixed fresh vegetables (cucumbers, bell peppers, carrots)
  • 1/4 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. In a large bowl, toss together the shredded chicken, crispy rice, and mixed fresh vegetables.
  2. In a separate bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, lime juice, and salt and pepper until smooth.
  3. Pour the peanut dressing over the chicken and rice mixture and toss until well-coated.
  4. Taste and adjust seasoning as necessary.
  5. Serve immediately, garnished with chopped cilantro.

Notes

For best results, add crispy rice just before serving to maintain its crunch.
