- 2 cups crispy rice (puffed rice or rice crackers)
- 2 cups mixed fresh vegetables (cucumbers, bell peppers, carrots)
- 1/4 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon honey or maple syrup
- 1 tablespoon rice vinegar
- 1 tablespoon lime juice
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- In a large bowl, toss together the shredded chicken, crispy rice, and mixed fresh vegetables.
- In a separate bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, lime juice, and salt and pepper until smooth.
- Pour the peanut dressing over the chicken and rice mixture and toss until well-coated.
- Taste and adjust seasoning as necessary.
- Serve immediately, garnished with chopped cilantro.
