Description

Delicious and filling burritos filled with tender chicken, vibrant bell peppers, and creamy ranch dressing, all wrapped in a warm tortilla.


Ingredients

  • 1 pound boneless, skinless chicken breast, thinly sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 cup cooked rice
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium-high until shimmering.
  2. Add the sliced chicken, seasoning it with garlic powder, onion powder, smoked paprika, chili powder, salt, and pepper. Cook for 5 to 7 minutes until golden and cooked through.
  3. Add the sliced bell peppers and sauté for an additional 3 to 4 minutes until slightly softened.
  4. Warm the tortillas until soft and pliable.
  5. Layer a tortilla with cooked rice, chicken and pepper mixture, ranch dressing, and shredded cheese.
  6. Fold in the sides of the tortilla and roll tightly to secure the fillings.
  7. For extra crunch, toast the burritos seam-side down in the skillet for 1 to 2 minutes on each side.
  8. Serve warm, garnished with fresh cilantro if desired.

Notes

Customize with black beans, jalapeños, or different types of cheese for added flavor.
