Delicious and filling burritos filled with tender chicken, vibrant bell peppers, and creamy ranch dressing, all wrapped in a warm tortilla.

- 1 pound boneless, skinless chicken breast, thinly sliced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 cup cooked rice
- 1/2 cup ranch dressing
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- 1/4 cup chopped fresh cilantro (optional)
Instructions
- Heat the olive oil in a large skillet over medium-high until shimmering.
- Add the sliced chicken, seasoning it with garlic powder, onion powder, smoked paprika, chili powder, salt, and pepper. Cook for 5 to 7 minutes until golden and cooked through.
- Add the sliced bell peppers and sauté for an additional 3 to 4 minutes until slightly softened.
- Warm the tortillas until soft and pliable.
- Layer a tortilla with cooked rice, chicken and pepper mixture, ranch dressing, and shredded cheese.
- Fold in the sides of the tortilla and roll tightly to secure the fillings.
- For extra crunch, toast the burritos seam-side down in the skillet for 1 to 2 minutes on each side.
- Serve warm, garnished with fresh cilantro if desired.
Notes
Customize with black beans, jalapeños, or different types of cheese for added flavor.
