- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 cup unsalted butter, softened
- 1 cup milk
- 3 1/2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1 cup fresh or canned cherries, pitted and chopped
- 8 oz cream cheese, softened
- 4 cups powdered sugar
- 1/2 cup cherry juice or puree
- 1 teaspoon cherry extract
- Fresh cherries for garnish
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour your two 9-inch round cake pans.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add the milk and vanilla extract into the creamed mixture, mixing until combined.
- Combine the flour and baking powder in a separate bowl, then gradually add to the wet ingredients.
- Fold in the chopped cherries into the batter gently.
- Pour the batter evenly into the prepared pans and bake for 25-30 minutes.
- Allow the cakes to cool in the pans for about 10 minutes before transferring to a wire rack to cool completely.
- Beat the softened cream cheese until smooth, then add the powdered sugar, cherry juice or puree, and cherry extract.
- Spread a generous amount of frosting on one cake layer, place the second layer on top, and frost the top and sides of the cake.
- Top the cake with fresh cherries and serve.
Notes
You can prepare the cake layers a day in advance. Ensure ingredients are softened for easy mixing. For added flavor, consider almond extract.
