Description

A comforting and hearty breakfast featuring crispy potatoes, fluffy scrambled eggs, and melted cheddar cheese.


Ingredients

  • 2 cups diced potatoes
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced ham or bacon (optional)
  • Salt and pepper to taste
  • 2 tablespoons olive oil or butter
  • Chopped green onions for garnish (optional)

Instructions

  1. Heat olive oil or butter in a large skillet over medium heat.
  2. Add the diced potatoes and cook for 10 to 15 minutes, stirring occasionally, until golden and crispy.
  3. If using, add ham or bacon and sauté until heated through.
  4. In a bowl, whisk together eggs with salt and pepper.
  5. Push the potatoes to one side of the pan, pour in the eggs, and gently stir until just set.
  6. Fold the potatoes into the eggs and sprinkle the shredded cheddar cheese on top to melt.
  7. Serve hot and garnish with green onions if desired.

Notes
