- 2 cups diced potatoes
- 4 large eggs
- 1 cup shredded cheddar cheese
- 1/2 cup diced ham or bacon (optional)
- Salt and pepper to taste
- 2 tablespoons olive oil or butter
- Chopped green onions for garnish (optional)
Instructions
- Heat olive oil or butter in a large skillet over medium heat.
- Add the diced potatoes and cook for 10 to 15 minutes, stirring occasionally, until golden and crispy.
- If using, add ham or bacon and sauté until heated through.
- In a bowl, whisk together eggs with salt and pepper.
- Push the potatoes to one side of the pan, pour in the eggs, and gently stir until just set.
- Fold the potatoes into the eggs and sprinkle the shredded cheddar cheese on top to melt.
- Serve hot and garnish with green onions if desired.
Notes
Make potatoes ahead of time for quicker breakfast prep. Customize with additional vegetables or different cheeses.
