Description

Wake up to a delicious blend of crispy potatoes, creamy scrambled eggs, and melted cheddar cheese for a warm and comforting breakfast.

Ingredients

Scale
  • 2 cups potatoes, diced (Yukon Gold or Russet)
  • 4 large eggs
  • 1 cup cheddar cheese, shredded
  • 1/2 cup diced ham or bacon (optional)
  • Salt and pepper to taste
  • 2 tablespoons butter or oil for frying

Instructions

  1. Dice the potatoes into small, evenly-sized pieces.
  2. Heat butter or oil in a non-stick skillet over medium heat. Add diced potatoes and season with salt. Cook until golden brown and crispy, about 10-12 minutes.
  3. If using, add ham or bacon to the skillet once the potatoes are nearly cooked, and sauté for an additional minute.
  4. In a bowl, whisk together eggs with salt and pepper until frothy.
  5. Pour the egg mixture over the potatoes, stirring gently. Cook until the eggs begin to set, about 3-4 minutes.
  6. Sprinkle cheddar cheese over the eggs and allow it to melt. Serve warm.

Notes

Customize with bell peppers or mushrooms for added flavor. Store leftovers in an airtight container in the fridge for up to 3 days.
