- 1 cup cottage cheese
- 1 cup shredded cheese
- 1/2 cup chopped vegetables (bell peppers, spinach, or onions)
- Salt and pepper to taste
- Cooking spray or oil for greasing
Instructions
- Preheat the oven to 350°F (175°C). Grease your muffin tin generously with cooking spray or oil.
- In a mixing bowl, whisk together the eggs and cottage cheese until well combined.
- Stir in the shredded cheese, chopped vegetables, salt, and pepper until evenly distributed.
- Pour the mixture into the muffin tin, filling each cup roughly 3/4 full.
- Bake for 20-25 minutes until the bites are firm and slightly golden. A toothpick inserted in the center should come out clean.
- Allow to cool for a few minutes before gently removing from the tin.
