Description

These delicious, fluffy Cheesy Muffin Tin Cottage Cheese Egg Bites are the perfect breakfast or snack, blending creamy cottage cheese, rich shredded cheese, and vibrant chopped vegetables.


Ingredients

  • 1 cup cottage cheese
  • 1 cup shredded cheese
  • 1/2 cup chopped vegetables (bell peppers, spinach, or onions)
  • Salt and pepper to taste
  • Cooking spray or oil for greasing

Instructions

  1. Preheat the oven to 350°F (175°C). Grease your muffin tin generously with cooking spray or oil.
  2. In a mixing bowl, whisk together the eggs and cottage cheese until well combined.
  3. Stir in the shredded cheese, chopped vegetables, salt, and pepper until evenly distributed.
  4. Pour the mixture into the muffin tin, filling each cup roughly 3/4 full.
