Instructions
- Preheat your oven to 350°F (175°C) and grease your muffin tin with cooking spray or oil.
- In a large mixing bowl, whisk together the eggs until frothy, then stir in the cottage cheese and shredded cheese.
- Fold in the diced vegetables and sprinkle with salt and pepper.
- Pour the egg mixture into each muffin tin cup, filling them about 3/4 full.
- Bake for 20-25 minutes or until tops are set and lightly golden brown.
