Description

A warm and fragrant cake featuring tropical coconut and creamy sweetened condensed milk, perfect for celebrations or cozy gatherings.


Ingredients

Scale
  • 1 can coconut milk
  • 1 can sweetened condensed milk
  • 4 large eggs
  • 1 cup sugar
  • 1 cup milk
  • 1 tablespoon vanilla extract
  • 1/2 cup grated coconut (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine coconut milk, sweetened condensed milk, eggs, sugar, milk, and vanilla extract in a blender and blend until smooth.
  3. Pour the mixture into a greased flan mold or baking dish.
  4. Place the flan mold inside a larger baking dish filled with water for a water bath.
  5. Bake for about 60 minutes until set but still slightly jiggly in the center.
  6. Cool before refrigerating for a few hours.
  7. Invert the cake onto a plate and top with grated coconut if desired.

Notes

Make-ahead: This cake keeps well in the fridge for up to four days. The water bath is essential for moisture.
