- 1 can coconut milk
- 1 can sweetened condensed milk
- 4 large eggs
- 1 cup sugar
- 1 cup milk
- 1 tablespoon vanilla extract
- 1/2 cup grated coconut (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine coconut milk, sweetened condensed milk, eggs, sugar, milk, and vanilla extract in a blender and blend until smooth.
- Pour the mixture into a greased flan mold or baking dish.
- Place the flan mold inside a larger baking dish filled with water for a water bath.
- Bake for about 60 minutes until set but still slightly jiggly in the center.
- Cool before refrigerating for a few hours.
- Invert the cake onto a plate and top with grated coconut if desired.
Notes
Make-ahead: This cake keeps well in the fridge for up to four days. The water bath is essential for moisture.
