Description

Ingredients

  • 1 cup fresh blueberries
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup whole milk
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt 1/2 cup butter in a saucepan over medium heat. Add 1 cup of sugar and stir until dissolved, creating caramel.
  3. Pour the caramel into a prepared round cake pan and arrange the blueberries on top.
  4. In a large mixing bowl, whisk together 1 1/2 cups flour, 2 tsp baking powder, and 1/2 tsp salt.
  5. In another bowl, combine 1/2 cup milk, 2 eggs, and 1 tsp vanilla extract and whisk until blended.
  6. Gradually combine wet and dry ingredients, mixing until smooth.
  7. Pour the batter over the blueberries and caramel in the pan, spreading evenly.
  8. Bake for 30-35 minutes, or until a toothpick comes out clean.
  9. Let cool for 10 minutes, then invert onto a plate to reveal the blueberries.

Notes

For best results, prepare ingredients ahead of time. You can substitute frozen blueberries if thawed and drained. Customize with spices or other fruits if desired.
