- 1 cup graham cracker crumbs
- 1/4 cup melted butter
- 2 tablespoons sugar
- 2 packages (8 oz each) cream cheese, softened
- 3/4 cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 cups diced tart apples
- 1/2 cup caramel sauce
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a mixing bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Press mixture into the bottom of the baking dish to form a crust.
- In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add 3/4 cup sugar and vanilla extract, mixing until blended.
- Add the eggs one at a time, mixing well after each addition.
- Fold in the diced apples and ground cinnamon.
- Pour cheesecake mixture over crust and spread evenly.
- Drizzle caramel sauce over the top and swirl it into the cheesecake batter.
- Bake for 30-35 minutes until set but slightly jiggly in the center.
- Cool to room temperature and then refrigerate for at least 2 hours before slicing.
- Cut into squares and serve chilled with additional caramel sauce if desired.
Notes
These bars can be made a day in advance and stored in the fridge. For a fun twist, try adding nuts or chocolate chips.
