Description

A delightful fusion of traditional Caprese and hearty orzo pasta, this salad features juicy cherry tomatoes, creamy mozzarella, and fragrant basil.

Ingredients

Scale
  • 1 cup orzo pasta
  • 2 cups cherry tomatoes, halved
  • 1 cup fresh mozzarella balls, halved
  • 1/2 cup fresh basil leaves, torn
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Prepare the Orzo: Bring a large pot of salted water to a boil. Stir in orzo and cook until al dente, about 8-10 minutes.
  2. Drain and Rinse: Drain the orzo and rinse under cold water to halt cooking.
  3. Mix the Vegetables: In a large bowl, combine cherry tomatoes, mozzarella, and basil. Toss gently.
  4. Prepare the Dressing: Whisk together olive oil, balsamic vinegar, salt, and pepper.
  5. Combine Everything: Pour dressing over the vegetable mixture, toss, and then add cooled orzo.
  6. Taste and Adjust: Adjust seasoning with additional salt and pepper if desired.
  7. Serve: Enjoy immediately or refrigerate for 30 minutes to meld flavors.

Notes

For a gluten-free option, substitute orzo with quinoa. Customize with your favorite vegetables or proteins.
