Description
A comforting dish featuring tender pasta with juicy cherry tomatoes and savory chicken, topped with fresh basil and Parmesan cheese.
Ingredients
Scale
- 8 ounces of pasta (spaghetti, penne, or fusilli)
- 2 cups of cherry tomatoes, halved
- 1 pound of chicken breasts, diced
- 2 tablespoons of fresh basil, chopped
- 3 cloves of garlic, minced
- 1 tablespoon of olive oil
- Salt and pepper to taste
- Grated Parmesan cheese for topping
Instructions
- Cook the Pasta: Start by boiling water in a large pot. Add salt and pasta, cooking according to package instructions. Once al dente, drain and set aside, reserving a bit of the pasta water.
- Sauté the Chicken: In a large skillet over medium heat, drizzle in the olive oil. Once shimmering, add the diced chicken, seasoning with salt and pepper. Cook until golden and cooked through, about 5-7 minutes.
- Add Garlic: Throw in the minced garlic and sauté for an additional minute until fragrant.
- Introduce Tomatoes and Basil: Stir in the halved cherry tomatoes and chopped basil. Cook until the tomatoes soften, about 3-4 minutes.
- Combine Everything: Toss the cooked pasta into the skillet, mixing until every strand is coated in the sauce. If the mixture seems dry, add reserved pasta water until desired consistency.
- Serve Warm: Plate the pasta and finish with a sprinkle of grated Parmesan cheese.
