Description

  • 2 cups of cherry tomatoes, halved
  • 1 pound of chicken breasts, diced
  • 2 tablespoons of fresh basil, chopped
  • 3 cloves of garlic, minced

  • Salt and pepper to taste
  • Grated Parmesan cheese for topping

Instructions

  1. Cook the Pasta: Start by boiling water in a large pot. Add salt and pasta, cooking according to package instructions. Once al dente, drain and set aside, reserving a bit of the pasta water.
  2. Sauté the Chicken: In a large skillet over medium heat, drizzle in the olive oil. Once shimmering, add the diced chicken, seasoning with salt and pepper. Cook until golden and cooked through, about 5-7 minutes.
  3. Add Garlic: Throw in the minced garlic and sauté for an additional minute until fragrant.
  4. Introduce Tomatoes and Basil: Stir in the halved cherry tomatoes and chopped basil. Cook until the tomatoes soften, about 3-4 minutes.
  5. Combine Everything: Toss the cooked pasta into the skillet, mixing until every strand is coated in the sauce. If the mixture seems dry, add reserved pasta water until desired consistency.
  6. Serve Warm: Plate the pasta and finish with a sprinkle of grated Parmesan cheese.
