Description

Ingredients

  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 tsp Cajun seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • 6 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 tsp Dijon mustard
  • Juice and zest of 1 lemon
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 12 oz bowtie (farfalle) pasta
  • 2 cups broccoli florets
  • 1/2 cup reserved pasta water
  • 1/2 cup grated Parmesan cheese (plus extra for topping)

Instructions

  1. Boil the Pasta and Broccoli: Bring a large pot of salted water to a boil. Once it’s bubbling, throw in the bowtie pasta and cook according to package instructions until al dente, about 7–9 minutes. In the last 3 minutes of cooking, add in your broccoli florets.
  2. Season and Cook the Chicken: While the pasta cooks, season the chicken pieces with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper. Heat olive oil in a skillet over medium-high heat. Add the chicken and cook for 6–7 minutes until golden and cooked through. Remove from the skillet and set aside.
  3. Make the Cowboy Butter Sauce: In the same skillet, reduce the heat to medium and add the butter. Once it melts, toss in the minced garlic and sauté for 1–2 minutes until fragrant. Stir in the red pepper flakes, Dijon mustard, lemon juice, and zest. Add parsley and chives, seasoning with salt and pepper to taste.
  4. Combine it All: Return the pasta, broccoli, and chicken to the skillet. Toss everything to coat in the sauce. If it seems dry, add reserved pasta water as needed. Stir in Parmesan cheese until creamy.
  5. Serve It Up: Dish warm with extra Parmesan, a sprinkle of fresh parsley, and a squeeze of lemon juice if desired.

Notes

Let the chicken rest after cooking for juicier bites. Reserve pasta water to help in creating the sauce’s texture.
