- 1/2 cup brown sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 cup fresh or frozen blueberries
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×9-inch baking dish with butter or oil.
- In a large mixing bowl, combine the rolled oats, all-purpose flour, brown sugar, baking powder, salt, and optional cinnamon. Use a whisk to mix until well combined.
- Gradually stir in the melted butter and vanilla extract, mixing until everything binds together into a wet dough.
- Gently fold in the blueberries, being careful not to crush them.
- Spread the mixture evenly into the prepared baking dish, pressing it slightly for an even layer.
- Bake for 25-30 minutes, or until the top turns golden brown.
- Allow the dish to cool for at least 10 minutes before cutting into squares or bars.
Notes
For a gluten-free alternative, use certified gluten-free oats. You can store the bars in an airtight container for up to 3 days or refrigerate for a week.
