- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/4 cup unsalted butter (melted)
- 1 egg
- 1/2 cup milk
- 1 tsp vanilla extract
- 1 1/2 cups fresh blueberries
- 4 oz cream cheese (softened)
- 3 tbsp granulated sugar (for filling)
- 1 egg yolk (for filling)
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with liners.
- Whisk together flour, sugar, baking powder, and salt in a large bowl.
- Combine melted butter, egg, milk, and vanilla extract in a separate bowl.
- Fold the wet ingredients into the dry ingredients until just combined.
- Add blueberries and gently mix to incorporate.
- Prepare the cream cheese filling by blending softened cream cheese, sugar, and egg yolk until smooth.
- Fill muffin cups halfway, add a teaspoon of cream cheese filling, then cover with additional batter.
- Bake for 18-22 minutes until golden brown and a toothpick comes out clean.
- Cool for a few minutes before transferring to a wire rack.
Notes
For best results, use fresh blueberries, and don’t overmix the batter.
