- 12 large mushrooms
- 4 slices of bacon, cooked and crumbled
- 1 cup fresh spinach, chopped
- 1/4 cup cream cheese, softened
- 1/4 cup ricotta cheese
- 1/4 cup mozzarella cheese, shredded
- 1/4 cup parmesan cheese, grated
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- Preheat the oven to 375°F (190°C).
- Clean the mushrooms by wiping them with a damp cloth and removing the stems.
- Sauté minced garlic in olive oil over medium heat until fragrant, about 30 seconds.
- Add chopped spinach and cook until wilted.
- Combine bacon, sautéed spinach, cream cheese, ricotta, mozzarella, parmesan, salt, and pepper in a mixing bowl, stirring until well blended.
- Stuff each mushroom cap with the cheesy filling, pressing down gently.
- Place the stuffed mushrooms on a baking sheet lined with parchment paper and drizzle with olive oil.
- Bake for 20-25 minutes or until the mushrooms are tender and the cheese is golden.
