Instructions
- Preheat your oven to 350°F (175°C). Prepare a standard 12-cup muffin tin by greasing it lightly or lining each cup with paper liners.
- Whisk together the flour, packed brown sugar, baking powder, ground cinnamon, and salt in a large mixing bowl.
- In a separate bowl, whisk together the eggs, whole milk, melted butter, and vanilla extract.
- Pour the wet mixture into the dry ingredients. Use a rubber spatula to gently fold them together until just combined.
- Fold in the diced apples until evenly distributed throughout the batter.
- Spoon the batter into the prepared muffin cups, filling each about two-thirds full.
- Bake for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the muffins to cool in the pan for five minutes, then transfer them to a wire rack to cool completely.
- Prepare the glaze by mixing the powdered sugar with 1 tablespoon of milk, adding more milk gradually until the desired consistency is achieved.
- Drizzle the glaze over the cooled muffins before serving.
